In the years he spent living and cooking in Vietnam, Chef Cameron Stauch learned about a tradition of vegetarian Vietnamese cuisine that is light and full of flavor.
Tonight Chef Cameron joins us in the Relish kitchen as he launches his new cookbook here in Canada. He will introduce you to a variety of Vietnamese ingredients that make this cuisine so popular. Based on recipes devised over centuries by Mahayana Buddhist monks, the dishes in Vegetarian Việt Nam make use of the full arsenal of Vietnamese herbs and sauces to make tofu, mushrooms, and vegetables burst with flavor like never before.
With a lavishly illustrated glossary that helps you recognize the mushrooms, noodles, fruits, and vegetables that make up the vegetarian Vietnamese pantry, Vegetarian Việt Nam will unlock an entire universe of flavor to people who want healthy, tasty, and sustainable food.

Meet The Chef: Born and raised in Kitchener, Cameron Stauch is a Canadian chef now living in Hanoi. During the last decade he has had the opportunity to eat and cook in kitchens throughout Asia and North America. His travels have allowed him to investigate a variety of cuisines and acquire an array of culinary techniques. Cameron is a former member of the cooking staff for the Governor General of Canada, highlighting Canadian heritage ingredients to such dignitaries as Queen Elizabeth, Prince of Wales & the Duke & Duchess of Cambridge. When he’s not cooking for his wife Ayesha and their children in Bangkok he’s cooking, traveling, and writing around Asia.
