Enjoying The Holidays With A Vegan Twist
Navigating the holiday buffet can be a difficult task for the vegan eater. Charcuterie boards laden with assorted cheeses, meats and dips or desserts and sweets made with eggs, butter and other dairy products make it difficult for people who choose to a vegan lifestyle. While the terms “vegan” and “vegetarian” are sometimes used interchangeably, they are quite different from each other.
Depending on their beliefs, some vegetarians choose to consume eggs and/or dairy products while vegans avoid all foods produced by animals or from animals. Regardless of why you might choose to eat a plant-based diet, it’s always nice to have an appetizer that satisfies everyone at the holiday party. Our vegan instructor Sandra Valvassori suggested we try her favourite recipe for fritters. These veggie-dense morsels of goodness are easy to eat on any occasion and are a great way to satisfy a snack craving. Plus they are high in fiber, Vitamin A and just taste amazing – or as Sandra likes to say…”they will change your life”. We have topped it with our favourite chutney for a festive flair. You certainly won’t use all the chutney for the fritters, but it pairs well with the holiday dinner and can be made and stored for weeks ahead.
